Recipe of the Week – Zucchini & Pomegranate Salad

Serves 2 or 4 as a side

2 zucchinis, shaved into ribbons
1 Lebanese cucumber, cut into strips
1 red capsicum
½ cup pomegranate seeds
100g reduced fat feta
1 tablespoon red wine vinegar
1 tablespoon olive oil

1) Mix olive oil and red wine vinegar. Dress salad ingredients and top with crumbled feta and seeds. Add chicken or prawns for a low carbohydrate meal.
